Description
Bellam Gavvalu, literally meaning “Jaggery Shells” or simply known as Sweet Shells, is a beloved and iconic traditional sweet snack from the Telugu-speaking states of Andhra Pradesh and Telangana, India. The name derives from its unique, grooved shape, which perfectly resembles small sea shells (Gavvalu in Telugu).
This sweet is prepared by kneading a firm dough typically made from Wheat Flour (Atta) or sometimes All-Purpose Flour (Maida), and a little hot ghee or oil for a flaky texture. Small portions of this dough are then pressed and rolled over a special corrugated wooden board (Gavvala peeta) or the back of a fork to achieve the signature shell shape. These shells are then deep-fried in oil until they are golden brown and perfectly crispy.
Finally, the crispy shells are tossed in a hot, thick syrup made from Jaggery (Bellam), which gives them a rich, earthy sweetness and a glossy coating. Bellam Gavvalu are particularly popular during major festivals like Sankranti and Diwali, prized for their delightful crunch and the wholesome sweetness imparted by the jaggery.
