Description
Peanut Chikki, also widely known as Palli Patti (in Telugu) or Groundnut Brittle, is one of the most famous and loved traditional Indian sweet candies. It is a simple yet nutritious brittle, made primarily from roasted peanuts (Groundnuts) and a sticky, caramelized Jaggery (Gud) syrup.
The preparation is quite straightforward but requires precision in making the jaggery syrup.
- Ingredients: The main ingredients are peanuts (peeled and roasted) and jaggery, with a tiny amount of water and sometimes a touch of ghee or baking soda to achieve the perfect crunchy texture that doesn’t stick to the teeth.
- Process: The jaggery is melted with a minimal amount of water and cooked until it reaches the “hard ball” or brittle stage. Once the syrup is ready, the roasted peanuts are quickly mixed in to ensure they are fully coated. The entire hot mixture is immediately poured onto a greased surface (like a plate or marble slab), quickly rolled flat into a thin slab, and then cut into squares or rectangles while still warm. Upon cooling completely, the chikki hardens into a crisp, sweet, and highly satisfying bar.
Peanut Chikki is a protein and iron-rich snack, often enjoyed as a quick energy boost and is especially popular during festivals like Sankranti and throughout the winter season.
