Description
Nuvvula Chikki, also known as Til Chikki (in Hindi) or Sesame Seed Brittle, is a popular and traditional Indian sweet candy made from roasted sesame seeds (Nuvvulu in Telugu) bound together with a caramelized jaggery syrup. This sweet is especially consumed during the winter season and the Sankranti festival, as both sesame and jaggery are known for their warming and nutritious properties.
The preparation involves first dry-roasting the sesame seeds until they are fragrant and lightly toasted. Separately, Jaggery (Bellam) is melted and cooked to a “hard ball” consistency, creating a thick, sticky syrup. The roasted sesame seeds are then quickly mixed into the hot jaggery syrup and immediately spread onto a greased surface. While still warm, the mixture is flattened and cut into rectangular or square pieces (Patti means slab or bar in Telugu). Once completely cooled, the chikki hardens into a very brittle, crunchy, and highly nutritious bar.
This sweet is prized for its high content of iron, calcium, protein, and healthy fats, making it a wholesome alternative to refined sugar candies.
