Description
Kaju Chikki, also known as Cashew Brittle, is a popular, traditional Indian sweet and snack. It is an incredibly crunchy, brittle confection made primarily from cashew nuts (Kaju) and a binding agent, usually jaggery (Gud) or sugar syrup.
The process involves cooking the jaggery or sugar until it reaches a specific hard-ball consistency (a brittle, caramelized syrup). Whole or broken cashews are then quickly mixed into the hot syrup and immediately spread out thinly and cut into squares or bars before the mixture hardens.
Kaju Chikki is loved for its rich, nutty flavor, the satisfying crunch it offers, and its natural nutritional value from the cashews. It is particularly popular during festivals like Makar Sankranti (Sankranthi) and is a healthy, energy-boosting treat enjoyed year-round. It is known for its long shelf life, provided it is stored in an airtight container away from moisture.
